Sauvignon Blanc grapes were harvested on one day and whole bunch pressed to tank for settling. After 48 hours the clear juice was racked to tank for fermentation. Semillon grapes were pressed directly to old barrels without settling. The wine was aged on its full lees, without sulphur, for nine months. Prior to bottling the components were blended together, filtered and then bottled without fining or stabilisation.
Ripe nectarine, grapefruit, flint and talc contribute to a full rich nose. The palate is very rich and textural. Along with the ripe stone fruit there are mineral textures of wet stone, pithy grapefruit and a tactile 'hardness'. The finish is very rich and pure. Expect this wine to develop toasty and honeyed notes under its natural cork closure.
