All grapes were harvested on one day and whole bunch pressed to tank for settling. After 48 hours the clear juice was racked to barrel and tank for fermentation. The wine was aged on its full lees, without sulphur, for nine months. Prior to bottling the components were blended together, filtered and then bottled without fining or stabilisation.
Complex notes of candied citrus peel, old fashioned rose and baking spice. The palate delivers a full range of flavours including ripe stone fruit and toasted brioche. This is a full bodied wine with warmth and generosity from both alcohol and residual sugar coupled with a very soft acidity.
Expect this wine to develop toasty and spice notes under its natural cork closure.
